Nourishing

Over the past few months I've had the privilege to spend time with a small group of dynamic, smart women -- we meet to talk about meaningful issues and ideas and, in particular, to discuss an article or two that someone has shared ahead of time.

These women are exceptional . . . and strong . . . and creative . . . and humble . . . and fierce . . . and terribly insightful and well-spoken.  My two hours with them feels like a mini vacation.  It's invigorating and nourishing on so many levels. 

Last night, we met for the second time.  My friend Karen brought a lovely salad that featured goat cheese and the satisfying sweetness of medjool dates. I highly recommend it to you -- as well as a good article -- should you be looking for a nourishing experience of your own.

A Salad with Chevre and Dates

Toss together in a large bowl:
torn leaf lettuce
pitted and torn medjool dates
plain goat cheese, crumbled
vinaigrette (pear-infused vinegar, olive oil, salt and pepper)

Add-on options:
toasted almonds, chopped
skinless chicken breast (rubbed with salt, olive oil, and your favorite herbs) roasted, cooled, and diced
